At The CCD, sustainability is not an add-on. It is embedded in everything we do, from how we source ingredients to how we manage waste. We know that clients and delegates alike are seeking ways to reduce their impact on the environment while still delivering exceptional experiences. Together, we can make events greener with simple, meaningful choices.
Food Provenance
We believe that food tastes better when it tells a story. That is why we work with local Irish suppliers who share our commitment to sustainability. By sourcing locally and seasonally, we ensure that dishes are fresher, more authentic and kinder to the planet. Since 2021, we have eliminated food sourced by air freight, choosing instead to showcase the best of Irish produce in our Spring/Summer and Autumn/Winter menu packs.
Plant-Based Choices
Plant-based dining plays an important role in reducing carbon emissions. We have seen demand for plant-based meals grow steadily, and by 2025 we plan to ensure that at least 50% of our menus are plant-based. We have already removed all dairy from our desserts and pastries and, in our staff canteen, Meat-Free Wednesdays, are proving to be very popular.
Healthy Hospitality
As a Gold accredited Healthy Venue, we focus on delegate wellbeing by ensuring at least 75% of our menus are considered healthy. All dishes are freshly prepared in our kitchens daily with inclusivity in mind. For example, since 2024, nuts have been fully eliminated from our food offering.
Packaging and Waste
Our food offering has been plastic-free since 2021, introducing compostable cups, plates and cutlery, and replacing plastic with recyclable or reusable alternatives. We also use AI-driven food waste management to optimise portioning and reduce waste. Any suitable surplus food is donated to local schools, charities and homeless shelters, ensuring that nothing goes to waste.
Industry Collaboration
We work with our hospitality partner (Levy Ireland), who is a proud member of Origin Green, the world’s only national food and drink sustainability programme. Together, we set measurable targets to respect the environment, reduce our footprint and serve local communities.
