Eating with the seasons.
At The CCD, our food philosophy is simple: celebrate the seasons, support local producers and deliver exceptional dining experiences that nurture both people and planet. We believe food should reflect the rhythms of nature, celebrating what’s freshest, most nourishing and most abundant at this time of year.
Our new Autumnn/Winter menu pack has been designed with this in mind. It’s a culinary journey through Ireland’s seasonal landscape, crafted by Executive Head Chef Leonard Fearon and Karl O’Reilly, who take inspiration from the land and sea around us. From earthy root vegetables and wholesome grains to wild caught seafood and slow-cooked seasonal meats, every dish is rooted in provenance and full of flavour. For those who prefer lighter or plant-based options, our team has created vibrant vegetarian and vegan dishes that showcase the same care and creativity.
Why Seasonal?
Nature knows best. By aligning our menus with the seasons, we ensure that ingredients arrive at your table at the peak of freshness, brimming with their maximum flavours and nutrition. Sourcing locally means fewer food miles, stronger ties with Irish farmers and fishermen and a more sustainable way to dine.
More than a meal
At The CCD, food is never just food. It is an experience. It’s about creating moments of connection, sparking conversation and nourishing wellbeing. That’s why every menu we design is authentically Irish, inclusive for all dietary needs, and freshly prepared each day in our kitchens. Paired with our 5-star service, it’s food that feels as good as it tastes.
A commitment to purpose
Sustainability sits at the heart of everything we do. We’re proud to hold ISO20121 accreditation, which guides our choices and ensures every dish contributes to a healthier planet. By choosing seasonal, local and sustainable produce we are embracing the Ireland first ethos by working alongside suppliers and clients to create positive changes together.
A taste of the season
Our Autumn/Winter menu pack captures the essence of the colder months: warming classics with a modern twist, alongside creative plates that highlight Ireland’s finest produce. It’s food designed not only to delight but to inspire and it is a reflection of the season on your plate.
Because eating with the seasons isn’t just a trend. It’s a way of connecting deeply to our food, our community and the natural world around us.
